baked cheesy dinner rolls

I’ve been making this frozen dinner roll recipe for years, but I recently updated it to make it quicker and even easier to make! You’re welcome!

I used to leave the frozen rolls whole, but I’ve decided that it’s even better (I’m wasn’t sure that was possible, but it is) to cut them into quarters. That means more cheesy, buttery, goodness on each roll! YUM!

Let me share all the tricks I’ve learned! Plus, I’ll give you a few suggestions for substitutions just in case you don’t have everything on hand.

Simple ingredients is all you need for easy dinner rolls

The ingredients for this recipe are simple and easy to keep on hand.

Let’s go over options for substituting if you don’t have everything on hand and don’t want to make a trip to the grocery store…or if the store is over 50 miles from your house and it’s out of the question!

  • Frozen Dinner Rolls – Rhodes frozen dinner rolls are my go-to because they taste like homemade without the hassle. You can use whole wheat, white, or even a loaf of frozen bread dough to make rolls.
  • Butter – no substitutes, just use the real thing. Salted or unsalted is fine.
  • Italian seasoning – If you don’t have it use 1/2 tsp. of each parsley, oregano, and basil.
  • Garlic – Garlic paste is my fave because it lasts a long time in the fridge and it’s so easy. You can also use garlic cloves, or if you’re really in a pinch use 1/2 tsp garlic powder.
  • Salt – Regular table salt, sea salt, or Kosher salt.
  • Parmesan Cheese – Grate it yourself or use the stuff in the can.

How to make overnight dinner rolls (refrigerator rolls)

This is a great option if you have more time earlier in the day and won’t be home right before dinner, but still want piping hot, fresh rolls for dinner.

I’ll break down the step by step instructions for you!

  1. Grease a 9-inch baking dish with non-stick baking spray.
  2. Thaw frozen rolls in the microwave for 2-3 minutes or until rolls are barely soft enough to cut. Cut rolls into quarters (kitchen shears are the easiest way to cut them). Set in greased baking dish.
  3. Melt butter in the microwave, about 30 seconds. Add Italian seasoning, salt, and garlic. Stir.
  4. Pour melted butter mixture over rolls in the prepared baking dish. Toss to coat.
  5. Sprinkle half of the Parmesan cheese over rolls. Gently toss to coat.
  6. Sprinkle remaining cheese over rolls.
  7. Tightly cover the baking pan with plastic wrap that has been sprayed with non-stick baking spray.
  8. Refrigerate overnight (or during the day). In the morning (or later in the day) the rolls should be about doubled in size.
  9. Remove rolls from the fridge and let sit at room temperature for about 15 minutes.
  10. Preheat oven to 350 degrees.
  11. Bake rolls for 20-25 minutes.
  12. Brush with additional butter, and sprinkle with extra cheese if you want! Trust me you want to!

  • Rolls – wheat, white, or use a loaf of frozen bread dough
  • Italian seasoning – you can also use 1/2 tsp EACH oregano, parsley, and basil

To make with whole rolls:

I originally made this recipe using whole dinner rolls and NOT cutting them into pieces. You can still do that if you’d like. Simply melt the butter, add seasonings, and toss FROZEN rolls in the butter mixture. Sprinkle with Parmesan cheese. Let rise in a greased pan, covered with plastic wrap. Bake at 350 degrees for about 20-25 minutes.
