There are three things that I love about these plantain buns.

  1. They dont fall apart!
  2. The arrowroot powder pretty much eliminates the banana flavor.
  3. “Normalsandwiches are now paleo! Thank the paleo Gods!

  • 2
    Yellow/ripe plantains
  • 1
    Sea salt
  • 1
    Arrowroot powder

  1. Preheat oven to 375 F.

  2. Line baking sheet with parchment paper and set aside.

  3. Peel and dice plantains. Toss them into your blender.

  4. Blend plantains on high until they reach a nice, smooth consistency. As long as your plantains are sufficiently ripe, you shouldn’t need to add any water to the blender. If they are a little tough, add a couple of tablespoons of water (only one tbsp at a time) until they blend easier.

  5. Add sea salt and arrowroot powder to the plantain mixture and blend again until well combined.

  6. Place 2-3 tbsp of plantain batter in a round circle on the parchment-lined baking sheet. Use a spatula or spoon to get them into the desired shape.

  7. Bake for 20-25 minutes or until they turn golden.
