Gluten-Free Oatmeal Chocolate Chip Cookies

Ingredients:

  • 7.5 oz Aherns All-Purpose Flour
  • 1 oz gluten-free oat flour
  • 1 1/2 oz Sweet Rice flour
  • 1 tsp Guar Gum
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp fine sea salt
  • 8 ounces (2 sticks) unsalted butter, at room temperature
  • 1 cup White Sugar (we use unbleached organic)
  • 1 cup packed brown sugar
  • 2 Large eggs, at room temperature
  • 2 tsp Vanilla Extract
  • 9 oz rolled oats (make sure they are certified gluten-free)
  • 6 oz Chocolate Chips
  • 6 oz bittersweet chocolate, cut into chunks
